UP4HEALTH has developed snack-bar prototypes enriched with Prebiofenol (PBF+), an ingredient produced from upcycled olive pulp. The demonstrator shows how the recovered ingredient can be incorporated into a finished food product.
The snack bars provide an additional food application for PBF+ and create a higher-value use for olive-processing sidestreams. The formulation also demonstrates how ingredients recovered from agricultural by-products can be incorporated into consumer food products.
